We have a limited Easter Special we think you’ll be excited about…wonderful, whole, slow-reared chicken, deboned, and stuffed with that most evocative of spring ingredients; wild garlic (with minced chicken thigh and smoked lardo). This gives the roast chicken a simple yet creative twist. Serve with buttery mashed potato and a classic chicken gravy. Wilt wild garlic leaves through the gravy just before serving. Other easy, but occasion worthy suggestions for Easter include: rolled lamb shoulder is fantastic in a birria, a Mexican braise, rich with dried chillies, vinegar and spices. The meat is shredded and then folded back through the cooking liquor. It’s perfect for soft corn tacos with minced onions, fresh coriander and a couple of salsas; fun for all the family. If you have a pizza oven, this could be the first chance of the year to fire it up. Scatter our Calabrian sausages over the dough, along with a little tomato sauce and smoked mozzarella; spoon rocket pesto over the top as it comes out of the oven. Or try a similar trick to make lamb merguez sausage meat flatbreads, add dollops of yoghurt, coriander, mint and parsley to garnish.
