Our lambs are farmed in the time-honoured traditional way, roaming the limestone pastures of the Yorkshire Dales. Shepherds have worked this landscape for hundreds of years passing wisdom from generation to generation.
Heritage breeds are best suited to these conditions, thriving on the lush upland pastures, wildflowers, herbs and heathers, producing a lamb imbued with striking depth of colour and flavour. Lamb of this quality produces incredible roasting joints, be it a classic Leg roasted with potatoes, seasonal greens and mint sauce, Shoulder rubbed with spices and slowly smoked to melting tenderness or Saddle joint served blushing pink with a punchy salsa verde.
