Seared directly over hot coals, or indirectly over dying embers, our collection of heritage breed cuts has been curated especially for this year's BBQ season!
Often BBQ meats have their bone-in for moisture retention, either marinaded overnight or simply seasoned with coarse sea salt and cracked black pepper. Our heritage breeds of livestock, properly aged, are incomparable and result in a unique depth-of-flavour. During the ageing process the muscle losses water which allows for quick caramelisation, essential for a really appetisingly deep colour to occur during the BBQ process.
The breeds we work with also have much higher than average marbling – intramuscular fat that melts during cooking, benefiting both the texture and flavour making them the best meats for BBQing.
