Yorkshire's Finest Mutton
Traditionally mutton was always the meat of choice, and far more widely consumed than lamb. However around 70 years ago this inclination began to shift in favour of lamb, due to changing food fashions, and a common misconception that the flavour of mutton was too... muttony!
It’s true, that by virtue of its age and quality of life mutton has a full and rich flavour, its meat is a darker colour than lamb, and has a generous fat content. We believe these qualities to be mutton's crowning glory; with a flavour big and bold enough to withstand some serious spicing, from tagines and curries to a classic shawarma, mutton is a versatile ingredient, and thankfully making a long overdue resurgence in our kitchens.
