Our mutton is characterised by complex flavours due to the older age of the animal and the variety of wildflowers, herbs and grasses on which the ewes graze.
With a flavour big and bold enough to withstand some serious spicing. From tagines and curries to a classic shawarma, mutton is thankfully making a long overdue resurgence.
A lamb becomes hogget on its first birthday and mutton on its second, although arguably the best mutton comes from sheep aged 4-6 years. At some stage in the middle of last century, mutton fell out of favour in Britain and became regarded as an inferior meat. Prior to this it was the meat of choice and far more widely consumed than lamb. A misconception that mutton has an excessively strong flavour is the probable cause, although this notion was somewhat misplaced. Whilst it is true that mutton does have a richer flavour (by virtue of its age), darker colour and more generous fat content; these qualities are in fact mutton's crowning glory.
Our mutton comes from hardy hill breeds like the Swaledale, Lonk and Dalesbred. Generations of shepherds have selected these breeds to roam the Yorkshire Dales - perfectly adapted to the wild conditions; the summer heat and the extreme cold of the windblown moortops in winter. Foraging an entirely natural diet of grasses, herbs and heather gives our mutton a unique depth of flavour, we enhance this by hanging on the bone for a minimum of 3 weeks before being expertly prepared by our team in the butchery.
