We champion native breeds of cattle, sheep and pigs, alongside wild venison and seasonal game, celebrating the remarkable flavour, character and diversity of Britain’s livestock heritage.
Our native breed-led, whole-carcass philosophy supports traditional farming, nose-to-tail eating and the careful use of every animal. The result is exceptional British meat, reared slowly and appropriately to each species: grass-fed beef and lamb, outdoor-reared pork, free-range poultry, wild venison and seasonal game, all expertly butchered to order.

We’ve also formed close connections with some of the UK’s most discerning chefs, many of whom have become friends of the business and regularly visit us and our farming partners in Yorkshire.

Good meat is a joy. When I first tried a lesser-known breed of pork reared on a small farm it was a moment of revelation. Whether it be beef, pork or lamb, the breed of animal defines its flavour, texture and character. When married with a good butcher who understands the responsibility of taking these prime animals and continuing the love.

Meet Our Founders, Jorge and Charlie
Founded in 2009 by Jorge Thomas, and later joined by his brother-in-law Charlie Cowling, Swaledale Online Butchers works with a network of around 30 small, family-run farms and smallholdings dotted across the wildly beautiful Yorkshire Dales. These farms rear Britain’s hardy native livestock breeds, selected for flavour, resilience and their deep connection to the landscape.
