Our Swaledale collection of lamb steaks and chops comes steeped in tradition and local history. Take the Barnsley double lamb chop, a thick wedge cut from across the saddle of the sheep, this famous cut has been intertwined with farming in Yorkshire for several centuries. Our cannon of lamb is the equivalent of the beef sirloin, it’s exquisite when seared and served pink, and has been a well deserved treat on a farmer’s table for generations.
Lamb leg is a favourite in hearty winter casseroles, stewed until the meat gently falls off the bone, and the marrow adds richness and an unmistakable depth of flavour to the dish. No one can forget the nation's favourite classic lamb chop, perfect for a quick sear on the bbq, the intense heat crisps up the fat cap and gives the meat a caramelised char. Chops retain moisture and remain succulent, and deliver maximum flavour in that delicious meat close to the bone.
