
A popular cut amongst the older generations, heritage breed ox tongue is a favourite amongst our restaurant community, with a melt in the mouth texture after slow cooking and a flavour more akin to a steak than offal. Poached, peeled and cooled, Ox tongue is one of our favourite cold cuts - so much the better with the complex flavour of grass fed cattle reared on lush Yorkshire pasture.
