Traditional breeds thrive at nature’s own pace, with our beef maturing over 29 to 60 months - significantly longer than the 18 months typical of commercial cattle. This slower, sustainable growth process enhances both flavour and appearance, producing dry-aged beef with darker flesh and rich fat, often yellow-hued - a true reflection of their grass and hay diet.
