At Swaledale Butchers, our heritage breed livestock, properly aged and naturally marbled, delivers a depth of flavour unmatched by commercial meat. During the dry-ageing process, the muscle loses water, which enhances its ability to caramelise quickly - creating the perfect deep, golden crust when grilled over an open flame.

Many of our BBQ cuts are bone-in, helping to retain moisture and enhance flavour. Some are marinated overnight, while others are simply seasoned with coarse sea salt and cracked black pepper, allowing the quality of the meat to take centre stage.
