The breeds we rear have much higher than average marbling; intramuscular fat that melts during cooking benefits both the texture and flavour resulting in the very finest cuts of meat for barbecuing.
Often BBQ meats have their bone-in for moisture retention, either marinaded overnight or simply seasoned with coarse sea salt and cracked black pepper. Our heritage breeds of livestock, properly aged, are incomparable and result in a unique depth of flavour. During the ageing process the muscle losses water which allows for quick caramelisation, essential for a really appetisingly deep colour to occur during the BBQ process.
All our cuts of meat are always fresh never frozen, butchered-to-order, vacuum-packed, and shipped in recyclable packaging to arrive safely insulated and ready to enjoy.
