Legs of lamb hand-diced by our expert butchers to approximately one inch pieces for added versatility; perfect for casseroles, curries and kebabs.

Swaledale lambs are free to wander the limestone pastures of the Yorkshire Dales, grazing as they have done for generations. This imparts the meat with its distinctive herby flavour, typical to this area we call home.

Swaledale’s Yorkshire lamb is famous for the flavour given from grazing over upland herbs and grasses. It’s fabulous. Well-fatted and perfectly hung.

Skewered as a lamb shish and combine the lamb in a marinade of Greek yoghurt, tomato purée, grated raw garlic and raw onion, chilli powder, cinnamon, cumin, adding lemon juice and coarse sea salt when cooking over charcoal. Dished up with warm un-leavened bread, labneh, humus, chilli sauce, fresh mint, tomatoes and pickles this is a sandwich you will want to scrunch the juices staining your tee-shirt with abandon.

While lambs are no strangers to salt marshes and cooked in cider with cockles and bacon and this is one of my most favourite surf and turf braises. From Yorkshire maybe, there is no harm done however in giving it the Lancashire hot pot treatment.

Lamb and vegetable soup with barley provides the most satisfying modesty.

Braised in a ginger and onion broth with noodles and lettuce added and a spicy crispy garlic and chilli sauce presents a bowl most slurp worthy.
