Father’s Day BBQ Collection

Father’s Day BBQ Collection

Father’s Day is a good excuse to get outside, light the barbecue and cook something that feels a bit more special than usual. If the weather plays ball, all the better. This collection brings together cuts that suit the occasion particularly well, whether you are planning an easy lunch, a long afternoon around the grill or a proper family feast.

From thick chops and richly marbled steaks to sausages, ribs and slower cuts for cooking over fire, everything here is chosen with that kind of meal in mind. And for dads with a taste for something a little different, there is diced ox heart too, marinated and ready for skewering over hot coals, then serving with flatbreads, tahini and pickled chillies.

More from Father’s Day: Fire Up the Grill

A prime steak may be the more traditional way to mark the occasion, and we have that covered too. Our T-bones, in particular, make a brilliant sharing steak. Grill them over the barbecue, letting the flames catch the meat here and there, then rest them well with a few anchovy fillets and a sprig or two of rosemary laid over the top, melting gently into the residual heat. Serve with a simple salad of wild rocket, shaved Parmesan, lemon juice and olive oil.

Or, if you have a smoker and time on your side, go for a Boston butt. Soak it overnight in cider, rub it with sugar and spices, then let it cook low and slow until a dark crust forms and the meat beneath becomes tender enough to pull apart with a spoon. A quick spritz of apple juice or cider every hour helps things along nicely. Pile it into brioche buns with crunchy homemade slaw, plenty of pickles and a generous spoonful of barbecue sauce.
