Product description

Ox heart is most certainly an underused part of the animal. Like many offal cuts, the heart is economical, highly nutritious, and delicious, and it should therefore be celebrated, just like all the other cuts. While it can be cooked in various ways, there is something about it that lends itself to skewering and cooking on a barbecue. Its natural beefy*, iron-heavy flavour is robust enough to take on the challenge of both a marinade and the char and smoke of a barbecue, in a most complimentary way.

In this case, the marinade in question is simple and loosely inspired by the flavours of the Levant. Without wanting to overpower the heart, this marinade is designed with a specific recipe in mind. Primed and ready to be skewered, cooked on the barbecue, and served as follows: ox heart recipe w/ flatbread, tahini dressing & pickled chillis.

This will be part of a glorious collection we have selected for Father’s Day. So, if you want to treat your dad with something a little different, then look no further than this. The weather looks like it might be taking a turn, so all the more reason to fire up the barbecue and get grilling. The ox heart skewers could easily be the centrepiece of your table or part of a wider setup; a mixed grill, if you will.

Diced ox heart, ground cumin seed, ground coriander seed, Aleppo pepper flakes, salt.

Cooking advice

  1. Remove the marinated meat from the fridge 1-hour before cooking to allow it to reach room temperature.
  2. Place the cubed heart in a bowl and drizzle with a little olive oil and a sprinkle of extra salt.
  3. Thread the meat onto skewers*. Each 400g packis ideal for 4 smaller or 2 larger skewers. The key is to pack the meat tightly on the skewers to ensure even cooking and moisture retention.
  4. Prepare a charcoal or wood BBQ and let it burn down until you're cooking over white-grey coals.
  5. Arrange the heart skewers on the barbecue, where the heat is hot but not too fierce, and cook for about 8-minutes, turning regularly.
  6. Once cooked, remove from the barbecue and let them rest.

*Either wood or metal skewers can be used. If using wood skewers, soak them in water for 30-minutes before you thread meat.
