
Traditional Bacon & Dry-Cured Meats - Heritage Breed Pork
At Swaledale, we are proud to produce heritage breed bacon using traditional dry-curing methods that have been practiced in Britain since the 16th century. These time-honoured techniques, originally favoured for their preservation qualities, also unlock the incredible culinary potential of high-welfare pork.
We use only outdoor-reared pigs from heritage breeds, including the exceptional Tamworth, renowned for producing superb Tamworth bacon. The same whole-muscle cuts we sell fresh to our restaurant chefs are used in our curing process. Our Tamworth and Middle White pigs are reared outdoors, where they root, wallow, and express their natural behaviours. Allowed to mature at their own pace, their meat develops a generous marbling and a rich, flavourful outer fat layer - perfect for dry-cured meats online.
