I like my bacon with a little black pudding, apple, fried bread and egg. This bacon is also a breakfast joy when sliced into batons, fried with a little onion then joined by fresh picked cockles and a good slug of cream, all seasoned with a little pepper and nutmeg and spooned over buttered toast."

"The judges enjoyed this full flavoured bacon which had a satisfying bite from the thick slicing. The curing and salt were well-judged to deliver a very strong, well developed and executed bacon.
The judges were impressed with the way this bacon cooked, with beautifully rendered fat and evenly caramelised meat. On the palate, the level of salt was perfect, and the judges appreciated the meatier bite of this bacon, with an impactful, rich porky taste.
This has a good look, aroma and depth of cut, yielding a pleasant, gently resilient chew. While we'd like a touch more fat here to lubricate and contrast with the lean meat, we did love the deeply porky flavour that persists through the chew. Salinity is well judged too, and the finish is nicely clean. A really pleasing example of green bacon."
