Dad's Delight: A Father's Day Feast

Dad's Delight: A Father's Day Feast

Fantastic! A day dedicated to celebrating our fathers and all they do for us. It's a role filled with complexity and challenges in this ever-evolving modern world, so let's seize the opportunity to treat them. And, making a sweeping generalisation here, what better way to do so than with some top-grade, traditionally farmed, native breed meat? With the weather looking promising - which, given this year's soggy start, is cause for celebration in itself - let's fire up the barbecue, stock the fridge with beers, juicy red wine, or his favourite soft drink, and shower him with love and grilled meats!

For dads with a penchant for offal, we've prepared just the treat this year. Diced and marinated ox heart, perfect for skewering and grilling over hot coals, then ready to be served with fresh flatbreads, tahini dressing, and pickled chillies.

A prime steak may be a more traditional way to show your love, so we've got you covered there too. Our T-bones, in particular, make for a fantastic celebratory, sharing steak. Grill them on the barbecue, letting the flames lick the steak in places, then let them rest well with a few slices of anchovy and rosemary laid on top, slowly melting in the residual heat of the meat. Serve with a simple salad of wild rocket leaves, shaved p Parmesan, lemon juice, and olive oil.

Alternatively, if you have a smoker and enough time to spare, why not try a Boston butt? Give it a bath in cider overnight, followed by a classic rub of sugar and spices, then let it spend a very long time in your smoker. A great little tip is to put some apple juice (or more cider) in a spray bottle and give the Boston Butt BBQ-style a spritz every hour or so. A remarkable dark crust will have formed, but underneath, the meat is so tender it can be pulled with a spoon. Serve it in brioche buns, accompanied by a crunchy, bright homemade slaw, a whole load of pickles, and barbecue sauce to complete the package.
