Coarsely minced with just enough fat to maximise flavour, mutton* mince is a versatile ingredient, a great alternative to lamb for a quick midweek meal - try Middle Eastern spicing for a flavoursome kofta, delicious with flatbreads and yoghurt.
Chef Val Warner inspires:
"For those who like their lamb lambier, mutton is a fuller tasting, deeper and fattier joy that with a little more concentration in attaining the certainly of tenderness is seeing an overdue comeback. More fibrous in texture when cooking whole a long slow cook is best. The mince is very flavourful and does more than well in a samosa with peas and strong spices.
Mixed with heart, liver, kidneys and oats and wrapped in caul fat or cabbage and given a long cook in onion gravy this is a cold whether triumph.
I love mutton mince in a pie with leeks or pies with stout and candied fruit also beneath crisp sugared and peppered pastry."
*By virtue of its 2+ years of age spent living wild and free on the Yorkshire Dales, our heritage breed mutton has a full and rich flavour, characterised by an entirely natural diet of grasses, herbs and heather; this unique taste is its crowning glory.
