With lamb offal we respect the ethos of whole carcass butchery. It’s simple common sense to consume animals in their entirety, look beyond the glitz of the prime cuts and roasting joints, to the bits often left behind. Interestingly it’s only really the UK and USA who shudder at the sound of offal, explore global cuisine and you’ll see offal delicacies placed up on pedestals of delight. So we are on a mission to share this wealth of Yorkshire produce with you, and help you embrace true nose-to-tail consumption.
We also embrace the natural life cycle of animals and the seasonal nature of some produce. Our lamb sweetbreads are rich and tender, with a creamy texture available only between April and late August / early September. Our incredible haggis is a St. JOHN collaboration that’s seasoned and spiced to perfection. Released just once a year it’s worthy of raising a dram to.
