Product description

Free-range, herb-fed Bronze turkey is, in our opinion, the finest and most deliciously succulent variety of turkey. The Bronze is a smaller, slower-growing breed, typically reared up to 22 weeks. It has a naturally higher fat content, a crucial factor in ensuring that all-important succulence. The meat is reliably juicy, dense, and complex in flavour, excelling on every front and defying the notion that turkey is tasteless and dry.

Bronze turkeys live in small flocks and lead a fully free-range life, adhering to the highest environmental and animal welfare standards. They enjoy a natural diet rich in a wide variety of herbs, from parsley and thyme to chervil and tarragon, which gives the meat an added depth of flavour.

This Christmas, we are offering an easy-to-carve, rolled, and stuffed turkey breast, ideal for a smaller gathering or for those who prefer white meat. We create a cavity in the breast and fill it with your choice of stuffing: Pork, Prunes in Armagnac, Shallot & Sage Stuffing, Classic Sausage Meat Stuffing Mix, or, new for 2024, Fig and Rosemary Stuffing. Whichever you choose - all are delicious - the stuffing helps maintain moisture within the breast while imparting a lovely flavour throughout. Roasted and then rested, the breast couldn’t be simpler to carve. The usual suspects will surely be on hand to complete the meal: easy bread sauce recipe, duck fat roast potatoes, and sprouts are a must, perhaps accompanied by carrots and braised red cabbage. Sounds like a winning combination to me. And if there are any leftovers, you'll have the makings of an outstanding sandwich. Remember that episode of Friends when Ross talks about his turkey sandwich with the ‘moist maker’? I always thought that sounded good - maybe give it a go with this excellent rolled joint.

Pork, Prunes in Armagnac, Shallot & Sage Stuffing

Pork shoulder and belly (62%), prunes soaked in Armagnac (sulphur dioxidesulphites) (16%), roasted shallots (10%), butter (milk), fresh sage, spring water, rice flour, coarse sea salt, sugar, ground black pepper, preservative (sulphur dioxide), ginger root powder, onion powder, ground nutmeg seed, ground mace.

Fig and Rosemary Stuffing

Pork shoulder and belly (35%), turkey thigh mince (35%), chicken liver (8%), dried figs (6%), port wine (sulphur dioxidesulphites), shallots, fresh rosemary, rice flour, coarse sea salt, sugar, ground black pepper, preservative (sulphur dioxide), ginger root powder, onion powder, ground nutmeg seed, ground mace.

Classic Sausage Meat Stuffing Mix

Pork shoulder and belly (78%), spring water, rice flour, coarse sea salt, sugar, ground black pepper, preservative (sulphur dioxide), ginger root powder, onion powder, ground nutmeg seed, ground mace.

Cooking advice

  1. Remove the rolled turkey breast from the fridge and its packaging, then leave it uncovered for 2-3 hours to reach room temperature.
  2. Season the turkey breast generously with fine sea salt and drizzle with a little olive oil.
  3. Preheat your oven to 200°C.
  4. Place the rolled turkey breast on a roasting tray and into the hot oven. Cook for 15-minutes, then reduce the temperature to 145°C and continue cooking for an additional hour.
  5. Once cooked, remove from the oven and allow it to rest in a warm place for at least 45-minutes before serving.
