The colder months bring plenty of reasons to gather, eat, and drink well. Whether you’re hosting a drinks party, serving canapés before dinner, or simply want something indulgent to snack on, these sausages are made for sharing moments of seasonal cheer.

Rather than sticking to the classic cocktail sausage, delicious as they may be, our talented sausage production team wanted to take things up a notch. Drawing inspiration from the abundance of venison and game birds at this time of year, the result is a sausage that’s simply exceptional. Made from venison shoulder and a mix of game bird breasts, complemented by bacon and pork shoulder for the ideal fat content, this sausage has a balanced blend of herbs, spices, honey, and a splash of port for depth and richness.

Picture bowls of these sausages on the table as friends gather around, with glasses in hand and the fire lit. Instead of the usual honey mustard glaze, try something different: once cooked, tip in a generous pour of Cumberland sauce, allowing it to coat the sausages as they cool slightly in the pan. Transfer to a serving bowl and watch as they disappear in no time.

Venison shoulder and breast (38%), mixed game bird breast (26%), pork shoulder and belly (20%), dry-cured smoked streaky bacon (5%) (pork belly, coarse sea salt, unrefined brown sugar, preservatives (sodium nitrate, sodium nitrite)), port wine (sulphur dioxide, sulphites), rice flour, coarse sea salt, sugar, honey, fresh thyme, ground juniper, green peppercorn, ground black pepper, preservative (sulphur dioxide), ginger root powder, onion powder, ground nutmeg seed, ground mace.
