Beef offal from our grass-fed, heritage breed cattle, is amongst the most nutrient-dense, delicious meat you can eat. Richly laden with vitamins and minerals, you can fortify your diet by adding in heart, liver, kidneys, tongue, marrow, trotters and sweetbreads.

The flavour of offal is distinctive, often creating a marmite-like reaction around the dinner table. However, for those of you who’ve seen the light, you’ll know that there are few meals tastier or more satisfying than simple, well prepared offal. Versatile in nature, offal can shine in numerous ways, such as
anticuchos, a dish of marinated heart, skewered and grilled, liver and onions, steak and kidney pie, braised tongue and a multitude of terrines and pates.

Assigning a value to every part of the carcass is central to our ethos of nose-to-tail butchery. Nothing wasted and every ingredient treated with respect, especially such flavourful, nutritious and health promoting elements as offal.
