Beef offal from our grass-fed, heritage breed cattle is among the most nutrient-dense and delicious meat you can eat. Richly laden with vitamins and minerals, you can fortify your diet by incorporating heart, liver, kidneys, tongue, marrow, trotters, and sweetbreads.
The flavour of offal is distinctive, often creating a marmite-like reaction around the dinner table. However, for those of you who’ve seen the light, you’ll know that there are few meals tastier or more satisfying than simple, well prepared offal. Versatile in nature, offal can shine in numerous ways, such as anticuchos, a dish of marinated heart, skewered and grilled, liver and onions, steak and kidney pie, braised tongue and a multitude of terrines and pates.
