Porchetta, or porquette in France, is a wonderfully flavoursome roasting joint with a distinct celebratory feel in many parts of the world. In Italy, porchetta has deep culinary roots and is often sold by pitchmen from iconic white vans, especially during public events or holidays. In Lazio, porchetta is a popular street food, even finding its way onto pizza bianca as a topping.

To make porchetta, boneless pork loin is wrapped with just enough belly to encase the loin. The belly provides protection for the leaner loin, with ample fat that melts and bastes the joint as it roasts, resulting in tender meat and beautifully crisp skin. Our dry-aged pork adds an extra dimension, delivering porchetta with particularly outstanding crackling.

Traditionally, herbs, garlic, and spices are added before rolling, infusing the joint with vibrant flavours. We honour the Italian origins with a stuffing of minced pork, fennel seeds, garlic, and red wine. Porchetta makes a wonderful centrepiece for Sunday lunch or festive gatherings.

Our Tamworth and Middle White pigs are reared outdoors, free to root, wallow, and exhibit their natural behaviours. Slow-grown, they develop naturally marbled meat with superior texture. To enhance its rich, distinctive flavour, all our native breed pork is dry-aged on the bone for three weeks in our Himalayan salt chamber.
