With its roots in Italian culinary traditions, namely the central Italian region of Lazio (although popular across the whole of Italy), Porchetta is a wonderfully flavoursome roasting joint with a distinct celebratory feel.

Pork* loin is prepared boneless leaving enough of the belly to roll around the eye of the loin - the belly providing both protection to the leaner loin within and ample fat to melt and baste the joint internally. The wonderfully tender meat within is surrounded by crisp skin, our dry-aged pork producing particularly outstanding crackling. We give a nod to the Italian origins of the dish with a delicious stuffing of minced pork laced with fennel seeds, garlic and red wine - this would be a wonderful centrepiece for Sunday lunch or the Christmas table.

There was a notable pork flavour that gave it character...a handsome joint with magnificent crackling and an enticing garlic-noted aroma...the combination of pork with crackling and herbing was certainly pleasing."
