Product description

⭐ great taste® 2023

Porchetta, or porquette in France, is a wonderfully flavoursome roasting joint that in many parts of the world has a distinct celebratory feel. In Italy, porchetta has its roots in culinary traditions and is often sold by pitchmen out of their iconic white vans, they do a roaring trade during public events or holidays. In the central Italian region of Lazio however, porchetta is a common street food and often used as a pizza topping for pizza bianco.

To make porchetta, pork* loin is prepared boneless with just enough belly to roll around the eye of the loin. The belly provides protection to the leaner loin cut that is wrapped within it, and contains ample fat to melt and baste the joint internally as it roasts.

Porchetta is known for its wonderfully tender meat, surrounded by crisp skin; however our additional dry-aged pork produces porchetta with particularly outstanding crackling.

Traditionally herbs, garlic and other spices are added to the pork before it is rolled, resulting in a finished product that is peppered with flavour and interest. We give a nod to the Italian origins of the dish with a delicious stuffing of minced pork laced with fennel seeds, garlic and red wine - porchetta makes a wonderful centrepiece for Sunday lunch or festive table.

great taste® commented:
"The crackling on this striking joint caught the judges' eye and delivered a memorable crunch. The meat was tender and we enjoyed the prominent notes of herbs, in particular tarragon. There was a notable pork flavour that gave it character...a handsome joint with magnificent crackling and an enticing garlic-noted aroma...the combination of pork with crackling and herbing was certainly pleasing."

*Tamworth and Middle White pigs are reared outside where they can root around, wallow and exhibit all of their instinctive behaviours. They're matured at their own pace which enables the fat to naturally marble the meat, and gives the pork a superior texture. To maximise the naturally occurring flavour, all our native breed pork is dry-aged on the bone for 3-weeks in our Himalayan salt chamber; this further enhances the rich and distinctive flavour. Swaledale Porchetta is Always Fresh Never Frozen®, butchered to order, vacuum packed, and shipped in recyclable packaging to arrive safely insulated and ready to enjoy.
