Product description

Satay is an Indonesian dish by origin, referring to marinated and skewered meat - typically goat, chicken, beef, mutton, pork, fish, or beef offal - cooked over fire. Contrary to popular belief, satay itself does not contain peanuts. Instead, peanuts enter the picture as a popular, but not exclusive, sauce to accompany the skewers. It’s this combination of skewered meat and peanut sauce that has travelled the globe, becoming a beloved feature in other regional cuisines and restaurants worldwide.

This September, we are offering our interpretation of this classic dish: Malaysian Beef Satay Skewers. After several trial runs and much deliberation, we decided that beef* cut from the sirloin was the best choice. Once trimmed of fat and sinew, the sirloin is cut into chunky steak strips, ready for its marinade. Fresh lemongrass, garlic, ginger, and shallots form the base of the marinade, supplemented by ground turmeric, cumin, and coriander, with a little sweet soy sauce and salt to balance the flavours. Simply take the meat and thread it onto skewers - there should be enough for 3-4 skewers depending on their size. Grill slowly over gently smouldering coals, allowing the meat to take on some colour without charring.

Jorge’s moreish peanut sauce recipe makes the perfect accompaniment, along with steamed rice and a fresh salad of cucumbers and onion. Ingredients

Sirloin steak* strips, ground coriander seed, ground cumin seed, fresh shallot, ground turmeric, unrefined soft brown sugar, Mediterranean sea salt, fresh garlic, fresh lemongrass, fresh ginger, dark sweet soy sauce (water, soybeans, sugar, salt, wheat flour), vegetable oil.

*Grass-fed, heritage breed beef slow grown to maturity on the lush, green pastures of the Yorkshire Dales. Dry-aged on the bone for >28 days.

Cooking advice

  1. Remove the marinated meat from the fridge 1-hour before cooking to allow it to reach room temperature.
  2. Thread onto skewers*, folding the meat back on itself a couple of times to create a wave-like effect.
  3. Light the barbecue and allow the coals to burn down to a grey/white heat. Once ready, place the skewers on the grill, aiming for a low to medium heat.
  4. Cook the skewers for one minute on each side, for a total of 8-10 minutes. The key is to maintain a low to medium heat so that the meat doesn’t dry out or char, but rather caramelises and absorbs the barbecue flavours while staying moist.
  5. Remove from the grill and serve immediately.

*Either wood or metal skewers can be used. If using wood skewers, soak them in water for 30-minutes before you thread meat.
