Guilty pleasures in food. We find the concept troubling. Our firm belief at Swaledale is that one shouldn’t feel guilty about indulging in gluttony - especially when it involves properly sourced, high-welfare meat. The guilt usually stems from eating something considered ‘dirty,’ ‘fatty,’ or ‘hyper-processed’ - more often than not, fast food. But in our opinion, if it feels good, do it (fans of Peep Show will appreciate this reference).

There’s also the secondary layer of guilt - the knowledge that fast food chains are often sourcing pretty terrible meat. But fear not, because at Swaledale, we source exceptional meat that nobody needs to feel guilty about. And we’re offering you the chance to indulge in one of the world’s greatest fast foods - fried chicken!

Our chicken drumsticks are brined in buttermilk, salt, pepper, and oregano, which seasons the meat while tenderising it and helping it retain moisture during cooking. We’re also sending you a bag of seasoned gluten-free flour, blended with a carefully chosen mix of spices, ready for dredging. Once well-coated, excess flour shaken off, they go straight into the deep fryer, a pan of oil, or an air fryer - whichever method you prefer. You’ll know they’re done when they’re crisp, golden, and totally seductive.

We recommend serving with a bright, fresh slaw and a side of wild garlic mayonnaise. A fun family meal, full of deep, satisfying flavour, and not an ounce of guilt in sight.

Ingredients

Chicken, buttermilk (milk), sea salt, ground white pepper, dried oregano. Flour for dredging: Gluten-free flour, corn flour, smoked paprika, chilli powder, garlic powder, onion powder, celery salt, ground coriander.

Cooking advice

  • Empty the seasoned flour into a large bowl.
  • Remove the drumsticks from their packaging, place them in the flour, and toss well to ensure they are fully coated. Let them sit in the flour for 10 minutes to help the coating adhere.
  • Preheat your fryer or a pan of oil to 175°C, and set your oven to 110°C.
  • Carefully place the drumsticks into the hot oil, being careful not to overcrowd the pan or fryer. Cook in batches if necessary. Fry for 8–10 minutes, until golden brown.
  • Drain off excess oil and transfer the drumsticks to an oven tray. Place in the preheated oven for 10 minutes to ensure they are fully cooked.
  • Serve immediately with your choice of sides and enjoy!
