Heritage Breed Beef Short Ribs - Rich, Unctuous & Full of Flavour
Cut from the short rib plate of heritage breed cattle, our beef short ribs are left on the bone for maximum depth of flavour. Unlike conventional short ribs, we retain the upper muscle for a more generous, meatier portion, a choice that suits the smaller dimensions of our native breed cattle.
Slow-reared on pasture in the Yorkshire countryside, our cattle develop the rich marbling that makes short ribs so unctuously tender when slow-cooked. Dry-aged for over 28 days in our Himalayan salt chamber, these ribs deliver an intensely beefy flavour, perfect for braising, slow-roasting, or smoking.
