Our 450g Sirloin Steak for Two to Share is a single, beautifully marbled, grass-fed sirloin — ideal when you're after something a little more indulgent. Cut from the loin of heritage breed beef and dry-aged on the bone for over 28 days, this steak delivers exceptional flavour and tenderness with every bite. Perfect for sharing, whether cooked over charcoal or seared in a pan and sliced to serve.

We also offer 2 × 250g Sirloin Steaks, ideal for individual portions or when you’d prefer to cook each to your guests’ liking.

"Grilled over charcoal on the barbecue is infinitely my favourite method for cooking sirloin. A variety of sauces will work — from a fresh salsa verde or simple garlic and parsley butter to a sauce of autumn ceps or brandy and peppercorns. So good is this cut that I often like it simply dressed with just salt, or salt, olive oil and lemon juice, served alongside a tomato salad with a good mustardy vinaigrette.

For an alternative, blitz together some red miso paste with a large handful of fresh sage, a splash of neutral oil, and a little water. Smear this creamy mix all over the beef and leave it to marinate overnight. Grill, slice, and eat with shiitake mushrooms dressed in Japanese soy sauce, rice vinegar and a touch of sancho pepper.

I’d suggest removing the meat from the heat when the internal temperature reads 52°C on your meat thermometer. Allow the sirloin to rest properly — and be sure to capture any juices for adding to an appropriate sauce."

Ingredients

Grass-fed, heritage breed beef, slow-grown to full maturity on the lush pastures of the Yorkshire Dales. Dry-aged on the bone for over 28 days to develop exceptional depth of flavour and tenderness.

Cooking advice

  1. Remove the steak from the fridge, take it out of its packaging, and pat dry with kitchen paper. Place on a plate and allow it to come up to room temperature.
  2. Preheat your oven to 180°C.
  3. Season the steak generously with sea salt.
  4. Set a non-stick or cast iron pan over medium to low heat, then add a tablespoon of oil*.
  5. Carefully stand the sirloin steak upright in the pan, fat side down. You’ll need to hold it in position for around 3 minutes to allow the fat to render slightly.
  6. Turn the heat up and lay the steak on its side. Cook for 2 minutes, moving it around the pan to ensure even colouring.
  7. Flip and repeat on the other side.
  8. Add a generous knob of butter to the pan. Reduce the heat slightly, and as the butter foams and begins to brown, baste the steak continuously with a spoon for around 1 minute, flipping the steak regularly as you go.
  9. Transfer the pan to the oven (or place the steak in an ovenproof tray if your pan isn’t oven-safe) and cook for a further 2 minutes for medium-rare.
  10. Remove from the oven and transfer the steak to a warm plate. Pour the hot butter from the pan over the steak and leave to rest for at least 10 minutes.

*Use an oil with a high smoke point and a neutral flavour
