Product description

Hand-diced by our expert butchery team, our beef* shin requires long, slow cooking to unlock its deep, satisfying flavours. Rich in natural collagen, it becomes wonderfully tender when given the time it deserves.

Chef Val Warner inspires:
"Beef shin is renowned for its tenderness, owing to its high collagen content, resulting in a yielding, soft, and adhesive texture that I personally adore, making it perfect for slow cooking.

One of my favourite dishes is a beloved pie, where the beef shin combines with rich gravy, apples, and cep mushrooms to create an undeniably delicious flavour. Topped with a crispy rough puff pastry, it becomes a truly memorable dish.

Alternatively, in a ragù infused with red wine, tomatoes, anchovies, fresh basil, and garlic, the beef shin sings. Served alongside buttery, wet polenta, it's a match made in heaven. Any remaining ragù can be shredded and reheated with pasta and pecorino cheese for a delightful encore.

*All Swaledale beef is from heritage breeds, raised on independent farms and smallholdings scattered throughout the stunning Yorkshire Dales. Slow-grown and free to roam the lush green hills and valleys, the result is exceptional-tasting beef with a rich, dense, and flavourful umami taste. Swaledale Diced Shin of Beef is Always Fresh, Never Frozen®, butchered to order, vacuum-packed, and shipped in recyclable packaging to ensure it arrives safely insulated and ready to enjoy.
