This cut is basically a lamb version of the Ribeye steak. Incredibly versatile, this cut can be seared quickly and served pink, or cooked long and slow until meltingly tender. Either way we think this is one of the most flavoursome cuts of all.
Our lambs are left to roam the limestone pastures of the Yorkshire Dales - farming in this traditional manner suits heritage breeds like the Swaledale, Dalesbred and Lonk - indigenous and therefore perfectly adapted to turn the lush pasture into exceptional lamb.
