Until further notice, we’re hand-making Kovbasa sausages in small batches twice a week, with all proceeds donated to the #CookForUkraine JustGiving page.

Smoked pork and beef sausages are a beloved staple across Eastern Europe, known as Kielbasa in Poland, Kolbász in Hungary, Klobasa in Slovenia, and Kovbasa in Ukraine. These sausages vary widely by region and family recipe, with adjustments in garlic, paprika, allspice, and the type of wood used for smoking.

Our Kovbasa pays homage to classic Ukrainian flavours, combining allspice, black pepper, high-quality paprika, marjoram, and fresh garlic. Smoked in-house over beech wood in an artisan style, this sausage is rich in tradition and flavour.

Ingredients

Pork shoulder and belly (60%), beef brisket and chuck (25%), spring water, coarse sea salt, fresh garlic, ground black pepper, ground paprika 80 ASTA, continental curing salts, preservative (sulphur dioxide), ground allspice, marjoram leaf.

Cooking advice

In our experience, Kovbasa sausages are best gently poached in hot water - avoid allowing them to simmer, as this can toughen the sausage. We recommend water at around 85°C for 30-minutes, or 20-minutes followed by a final cook, depending on your dish. Try finishing by gently pan-frying with onions or adding to a braise of white cabbage, apples, smoked bacon, onions, garlic, and caraway."
