Our hand-diced beef shin is expertly prepared by our skilled butchery team, ensuring each piece is cut to the highest standard. Sourced from grass-fed, heritage breed cattle raised on the lush pastures of the Yorkshire Dales, this cut embodies the rich quality and flavour synonymous with traditional British farming.

Beef shin is prized for its depth of flavour and natural richness in collagen, which melts down during long, slow cooking, resulting in buttery, fall-apart tenderness. Perfect for slow-cooked stews, casseroles, and braises, it delivers a hearty, comforting meal packed with robust, savoury notes.

Allowing the beef shin to cook gently over time not only unlocks its full flavour but also enhances the texture, making it a favourite for classic British dishes like Lancashire hotpot or slow-braised beef shin ragù.

"Beef shin is renowned for its tenderness, owing to its high collagen content, resulting in a yielding, soft, and adhesive texture that I personally adore, making it perfect for slow cooking.

One of my favourite dishes is a beloved pie, where the beef shin combines with rich gravy, apples, and cep mushrooms to create an undeniably delicious flavour. Topped with a crispy rough puff pastry, it becomes a truly memorable dish.

Alternatively, in a ragù infused with red wine, tomatoes, anchovies, fresh basil, and garlic, the beef shin sings. Served alongside buttery, wet polenta, it's a match made in heaven. Any remaining ragù can be shredded and reheated with pasta and pecorino cheese for a delightful encore."
