Hand-diced by our expert butchery team, our beef* shin requires long, slow cooking to unlock its deep, satisfying flavours. Rich in natural collagen, it becomes wonderfully tender when given the time it deserves.

Alternatively, in a ragù infused with red wine, tomatoes, anchovies, fresh basil, and garlic, the beef shin sings. Served alongside buttery, wet polenta, it's a match made in heaven. Any remaining ragù can be shredded and reheated with pasta and pecorino cheese for a delightful encore.
