Product description

Our free range, herb-fed chicken pieces are prepared from the breast. Hand-diced by our butchery team, this is an ingredient with incredible versatility; Thai or Chinese-style stir-frys, a multitude of curries, subtly spiced tagines with green olives and preserved lemons or fajitas laced with lime and coriander.

Keeping life easy and diced breast is brilliant for a creamy or no cream chicken pie. Things I like to add to the sauce are fresh tarragon, capers, leeks and lardons or maybe even a couple of (quartered) hard-boiled eggs. A touch of Dijon mustard in the sauce is a personal essential.

Alternatively, lay the diced chicken between two pieces of greaseproof paper and beat them out relatively flat; velveting the pieces of breast in this Chinese-style with corn starch, a little cooking wine and egg will guarantee a most wonderful tender result. Combine with say, a black bean sauce, a lemon sauce, a shiitake mushroom sauce or a dish with toasted cashew nuts and fresh red chillies. 

If making any kind of quick braise and be sure not to overcook the chicken as breast does not have the same forgiveness for overcooking that the brown meat allows.
