Product description

A simple recipe that really allows the quality of our heritage breed pork* to shine. Coarsely-minced and seasoned with a pinch of salt, pepper, and a little freshly ground coriander and caraway. These two spices add a little magic and although only vaguely detectable, it is abundantly clear when they are missing.

Chef Valentine Warner inspires:
"Yum! Peel a squash (use a British variety such as Red Onion or Blue Hubbard) then cook in a pot with butter, some softened onion, a little water, nutmeg and black pepper. When soft, beat to a purée adding in some Tunworth cheese. Eat with the grilled sausages on top.

De-skin the sausages and again mixing with softened onion and black pepper then force into hollowed out, thick rounds of marrow. Lay a piece greaseproof paper on a tray and cover in a faintly cheesy béchamel. Bake till the marrow is soft, the sauce bubbling. Yippee!

Chopped in rings, fried and then cooked up with softened onions, cockles, a little cream and chopped fresh parsley added and this is delicious on fried toast.

Shoulder and belly are our preferred cuts providing just the right fat content for a really succulent sausage.
