A cut perfect for BBQ season - heritage breed lamb skilfully butterflied by our butchers and rubbed in a paste of pounded thyme leaves, salt, pepper, garlic and smoked paprika, with the addition of red wine vinegar and olive oil to allow these flavours to really penetrate. This treatment compliments lamb incredibly well - we would highly recommend high heat on the BBQ or griddle pan, turning frequently and serving medium rare for optimum flavour and texture.
