Boned and rolled for convenient carving, rolled mutton leg is a wonderful ingredient for slow-roasting or pot-roasting low and slow, layers of flavour developing as the meat becomes enticingly tender. Think of onion, garlic, red wine and flageolet beans for a warming weekend treat.
From mature ewes older than 2 years, our heritage breed mutton is characterised by complex flavours due to both the older age of the animal and the variety of wildflowers, herbs and grasses on which the ewes graze in the dramatic landscape of the Yorkshire Dales.
