A perfect one-pot ingredient, the bone delivering complex flavours during long slow cooking and the marrow enriching and deepening the flavour further. From small herds reared on grass in the Yorkshire countryside, beef osso bucco is an Autumn and winter classic, but equally as good with lighter flavours in spring and summer.
