Our lamb merguez has long been a staple at The Three Compasses, piled into a baguette with harissa aïoli and frites. A snack so delicious it has never left the menu.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eIt is a combination Henry discovered by chance. Early one morning at Rungis market in Paris, feeling somewhat jaded, he reached for the restorative qualities of a merguez-frites baguette with aïoli.
