A whole, herb-fed chicken with accompanying lemon and thyme butter. The flavours will infuse into and naturally baste the meat as the bird cooks giving a real depth-of-flavour in a twist on the traditional roast.
Representing the very best of British poultry (we’ve been working with North Yorkshire poultry farmer Edward Wilkinson for many years), herb-fed chickens live in mobile huts in small flock sizes, are hand-fed and bedded up daily with fresh straw.
As well as foraging in the pasture, from 4 weeks old fresh herbs are introduced into their diet. The herbs are a mixture including basil, chives, dill, coriander and various salads to name just a few. Their absolute favourite is rocket and when the odd chilli arrives there is always a fight for it – the only herb they don’t like is sage! All the herbs, salads and edible flowers are fresh from a local family-run farm.
