A beef carcass is a highly complex structure of interlocking muscle groups, it takes immense skill to break down into recognisable cuts or, as the case may be here, some less recognisable.
The beauty of properly aged, heritage breeds is that the options are more plentiful, as the quality of the carcass allows more options for some of the cuts considered less prime. Our skilled butchers practice seam-butchery to really make the most of these cuts, and whilst they may be less prime, they are the most flavoursome of all. Cooking technique is important here as without exception we would recommend high heat and a medium rare cook for the best texture and fullest flavour.
